joannqn
Making manicotti and opened the factory-sealed ricotta cheese to find a dime-sized circle of pink discoloring on the top of the cheese. Bad?
BeckyFL
No. Only because I don't know what it would be. When in doubt don't is my motto.
JudoMom
I don't know that I would. Here's a link that says mold can be pink on cheese, and that ricotta can spoil from within.
bookfiend
It is is localized and just sitting right there on top? I would scoop it off and use the cheese. You are baking the whole thing right? However, we are adventursome eaters! Don't use if the pink is all the way through the middle of the container.
ChristusG
I would not eat it.
Mergath
I would scoop off a good portion around the pink spot, then do an intensive visual inspection and taste/smell test of the rest. If I didn't see/taste/smell anything even the least bit weird, I'd use it. If I was the least bit unsure, it'd go in the trash.

Pax
I would not eat it. And you can use provolone and sour cream to substitute for ricotta (my husband doesn't do ricotta).
