MariannNOVA
I've signed up to bring a meal to a family in our co-op - I do know that they eat vegan and I checked our co-op info sheet: no meat, no cheese, no egg products. Would you be so kind as to share your favorite vegan dinner recipes with me? (Including dessert). And, I am not opposed to getting suggestions like: Buy thus and such already prepared in Whole Foods. TIA;)
Impish
Stir fry. My 'go to' when MIL is here. Fried rice, most Chinese food I cook is easily vegan. Dessert, I dunno. While MIL throws hissy fits about meals, she slurps down 2 servings of strawberry shortcake (don't blame me, her son bought it!)
OrganicAnn
How about spaghetti and marinara sauce. Salad. Garlic bread (bread/EVOO/garlic).
Jen in PA
I like to make black bean burritos for my on-again-off-again vegan sister. I make black beans and season them with garlic, onions, cumin, chili powder, sriracha, and lots of fresh cilantro and some lime juice. I half-mash this, stir in some cooked rice, and roll it up in tortillas. I bake them until heated through and serve with a huge salad, roasted veggies (usually red bell pepper, yellow squash, shallots, and zucchini), homemade guacamole, store-bought salsa, and tortilla chips.
