Julie in CA
Should I try one of the South Beach Diet cookbooks for food ideas for my insulin-resistant dd? If so, which one is most likely to be helpful with a gentle transition for a family of picky American-style eaters? :bigear:

DesertDweller
I'm not real familiar with the South Beach cookbooks. I had the book at one time, but I never did the SB diet. If you're looking for low carb ideas, this is a great web site with tons of recipes. I've tried quite a few. Many of them are delicious and easy to prepare. http://www.genaw.com/lowcarb/ I do have several low carb cookbooks as well. One of my favorites is Options: Low Carbohydrate Comfort Foods by Laura M. Kinney R.N. I think it's available through Amazon, but I haven't checked lately. I also like George Stella's cookbooks. In addition, he has a web site with recipes and ideas. I don't know if you're specifically looking for South Beach, but you may find recipes that are low carb that work with that particular diet or just need a little bit of tweaking to make them compatible.
