Something beany that would go well over mashed potatoes?

It was decent. Rustic, but it contained meat, which made the boys happy. :001_smile: I had been trying to go meat-free, but I was too tired to think things through, so . . .

 

I sauteed two onions, then added a little ground turkey. When that was all browned, I added a can of black beans and a can of white beans; then some flour and a bit of chicken broth for gravy. A sprinkle of thyme.

 

Simmered until the baby woke up from his nap, and then served it over mashed taters.

 

The big hit, though, were the carrot fries. Lots and lots of carrots, cut in to strips of your general fry size. Tossed with a smidgeon of olive oil, sprinkled with salt. Baked at 400 until browned slightly on the outside--half an hour? Very tasty. They begged for more, which I didn't have.
