LauraGB
MIL is having an Easter dinner tomorrow because she will be gone over the actual holiday. There should be about 14 people. I am in charge of bringing a salad. I know she'll have bagged lettuce salad there, so I'm guessing I should bring a pasta salad or some other salad-like thing. Ham is on the menu. Would this Black-Eyed Pea Salad pair well with ham and potatoes plus the inevitable various cream-based vegetable dishes? Something else? On hand, aside from the ingredients for the black-eyed pea salad, I've got pasta and an assortment of veggies - avocado, cauliflower, tomatoes, red and green peppers, carrots, celelry, red/white onions, etc. I've got garlic, olives, balsamic and red wine vinegars and olive oil, and assortment of cheeses. :bigear:
