What salad to bring to an Easter Dinner?

Recommended Posts

MIL is having an Easter dinner tomorrow because she will be gone over the actual holiday. There should be about 14 people. I am in charge of bringing a salad. I know she'll have bagged lettuce salad there, so I'm guessing I should bring a pasta salad or some other salad-like thing. Ham is on the menu. Would this Black-Eyed Pea Salad pair well with ham and potatoes plus the inevitable various cream-based vegetable dishes? Something else? On hand, aside from the ingredients for the black-eyed pea salad, I've got pasta and an assortment of veggies - avocado, cauliflower, tomatoes, red and green peppers, carrots, celelry, red/white onions, etc. I've got garlic, olives, balsamic and red wine vinegars and olive oil, and assortment of cheeses.
