It would be 2 cups of puree, but if a whole vegetable, I would doubt if you would get more than 1/4 to 1/2 cup of puree after peeling and seeding. tmulcahy Posted October 26, 2009 Share Posted October 26, 2009 I doubt the recipe calls for a weighted measurement, most likely it is calling for 16 fluid oz or 2 cups. After baking, peeling, and seeding you usually get a little over two cups. I sometimes get 4 cups from one pie pumpkin. A recipe I have for homemade pumpkin pie calls for two cups of the puree. I use two cups of the stuff I dig out after I bake and peel and seed. It is easier to measure after it is pureed in a food processor (less lumpy :). I hope that helps.
