eternalknot Posted September 19, 2009 Share Posted September 19, 2009 Maybe the squash was a bit hard to begin with? In which case it might still need a bit of cooking time. I've had a few that cooked for 60 minutes at 375 and still weren't tender. I turned it up to 400, and let it cook for another 30 minutes, checking at 10 minute intervals. I don't know if you added a small bit of water to the pan, but the steam action usually helps and will keep the cooktime to the usual 60 or so minutes. Not bad, two of the kids tried it. :) Next time I'll add some water (it did seem a little dry) and turn the halves upside down. I cut them in half, scoop the seeds and poke some holes in the outside with the tip of a sharp knife. I don't remember how long it took.
