We have been doing this for 2 years now! It is great!!! I am not waiting for a husband for our main meal since he passed away 3 years ago, so it is just me and the kids. Our after school schedule is very busy so this works great for us. I also like having all of the dishes etc. done earlier in the day. Eating your largest meal at mid-day is better for your body too!!!
During the school week, I plan easier meals. Since it is only the 3 of us, most meals last us 2 days...so I just re-heat the 2nd day. My children are kitchen helpers so that does help. When the kids have some independent work to do, I do some meal prep. I also prep. meals the night before.
I do utilize the crock pot and cook things on high rather than low.
