Parrothead
Tonight my group drew names for a 12 Days of Christmas Secret Santa. The lady I got works full time. It is just her and her dh - the kids are all grown and out of the house. I was thinking of making dinner for her and her dh one day as one of the gifts. The only things I can think of to make are my two specialties which she knows. If she were to receive either of these she would know right away who gave them to her. Any one have any ideas for an easy, portable meal? I've got salad and maybe peach cobbler for dessert. I can't think of a main dish though. BritAnnia
Chicken corn chowder. Yum! I made some for dinner last night, and we had enough for tonights dinner as well. It's a rich tasting meal without being expensive.

Is chicken corn chowder a white sauce based soup with chicken and corn? Does it have noodles or potatoes?
Once
The Vietnamese Chicken recipe I posted over at the In the Kitchen social group has always been received well. It is very easy to move from one house to the other...I have done it many times. Any white rice is fine with it and a salad rounds it off nicely. I haven't had a secret santa for 25 years....sounds like fun.:001_smile:
BritAnnia
Yes, that's it. The recipe I use includes potatoes. I think the basic recipe is easily adaptable for any ingredients you'd prefer to include. I got the recipe from Cooking Light Magazine many years ago. Here's a copy of it online... AuntieM
and it can be a romantic dinner for two! Wish you were my secret santa, what a nice idea to provide a meal. I'd have never thought of that.
Parrothead
and it can be a romantic dinner for two! Wish you were my secret santa, what a nice idea to provide a meal. I'd have never thought of that. Oh, thanks for that! I would not have thought to get candles. The only reason I thought of it is because money is tight. What ever I fix for dinner that night I can send some of it her way. For the 12 days I've got (in no particular order) Cookies in a pretty tin Guitar picks in a small dish with a lid - she plays Fruit scented candle Peppermint candy cane bouquet Warm supportive socks for her daily walk in the snow A collection of recipes in a pretty box' Coffee/tea mug with a variety of specialty teas A writing journal Yarn - she knits and crochets Dinner for two A collection of homemade bookmarks A live plant in a pretty pot.
