It is the first time she has been here during the holiday season and I'd like to do some of the traditional festival foods that have been a part of her heritage. But, this year we are gluten free. I *think* I've figured out how to make piparkuks gf but I'm not at all sure about piragi. That dough is so nice and sweet and buttery, and gluten. GF stuff never tastes like the real thing except to GF people. Could you do traditional pierogies for MIL and maybe bake the filling in a casserole dish for the rest of the family or put it into some GF wonton wrappers?
