Easy vegetarian dishes

Burritos -- cook up black beans and chicken or beef separately, plus rice if desired, and peppers and onions, and let everyone take what they want. No pressure on anyone!


Greek salad is very filling, and you can easily add chicken or shrimp on the side. Balsamic or other vinaigrette (Worcestershire sauce often has anchovies in it), cucumbers, olives, greens, feta cheese, pepperoncini, red onion. . .


My kids love this casserole, which goes well with sautéed carrots and onions and bread for those who like it: a dozen beaten eggs, a 16 oz. bag of chopped spinach (no need to thaw), a 32 oz. container of cottage cheese, and a couple of cups of cheddar cheese, all mixed together and baked at 350 for 30 minutes or so, until set and golden.
