Also, before you can anything, read up about it and follow recipes and directions exactly. You can't see, taste, or smell botulism.

Jams and jellies are a great way to start due to their high sugar content (even Pomonas, which is lower in sugar and what I always recommend). Applesauce--or even just cooked, diced apples (for winter pies!) is another easy, pretty fail safe way to get into canning.

What the others said.  

 

We love canning.  DH got into salsa and did four batches one weekend when I was away.  We can primarily from our garden although this week is applesauce because I got a good deal on organic apples.  I pulled our apple trees earlier this year because they were diseased and couldn't be saved.

 

As soon as I got water bath canning down, I yearned for a pressure canner so I could do green beans because we grow far more than we can use.  So that was on my list for quite awhile until I mentioned to a relative who gave us one for Christmas.   IMHO late season green beans taste better canned than frozen!
