Chelle in MO Posted December 13, 2013 Share Posted December 13, 2013 I made these this week and they're delicious! The only thing I think I'll do differently next time is cut down the butter some. I always reduce the sugar by a bit when I'm baking and I usually leave out the salt, but I've included original amounts here. Hope you enjoy! Cranberry Cream Cheese Muffins from William's Grant Inn 1 C softened butter 2 C flour 8 oz. softened cream cheese 1 1/2 t baking powder 1 1/2 C sugar 1/2 t salt 1 1/2 t vanilla 2 C fresh or frozen cranberries 4 eggs 1/2 C chopped pecans (I used English walnuts because they're yummier w/cranberries :drool5: ) Preheat oven to 350. Beat together butter, cream cheese, sugar, vanilla, and eggs. Mix in flour, baking powder, and salt. Fold in cranberries and nuts. Spoon mix into muffin pans, filling two-thirds full. Bake 25-30 min. shukriyya Posted December 13, 2013 Share Posted December 13, 2013 These look good though I'd likely reduce the sugar by at least 1/2 a cup possibly more. And I'd add a couple of tbs of orange zest.
