It is one part peach puree and one part sugar, simmered for 20 minutes, then put into jars and frozen. It does not get processed. I went to the freezer to get something, and the door was not shut all the way. All these jars in the freezer have thawed. Can I refreeze them? But, even so, I'd be inclined to shorten my expectation of how long to keep it for. If they are opened, or if they got genuinely warm, eat it up. If necessary, that 'peach honey' plus some canned or fresh peaches would probably make a lovely pair of pies, or cobblers.
