I recently took someone a lasagna using this recipe, and they said it was the best lasagna they had ever eaten. Eta: I do often add eggplant, zucchini, etc when I add the onions. nmoira Posted April 20, 2013 Share Posted April 20, 2013 I usually start with a marinara sauce from a glass jar as it's cheaper than finding BPA-free cans of tomatoes. This is easily scaled up. 1 jar 25.5 oz marinara, thickish (I like Muir Glen Cabernet Marinara) 1 medium to large onion, chopped 1 medium/2 small zucchini, small dice 2 medium carrots, grated/shredded or small dice 1 lb ground meat (whatever you like -- I usually use ground turkey thigh, or 3:1 lean ground beef to ground pork) garlic, minced or pressed (you know how much you like) a good pinch of cumin pepper to taste adjust for salt at the very end - saute onion, zucchini, carrot with a pinch of salt until onion is translucent - add garlic, good pinch of ground cumin - add meat, cook until brown, breaking up with a spoon - add sauce, simmer for at least a half hour - add pepper, adjust for salt Quote Link to comment Share on other sites More sharing options...

To do the giant batch, pour everything into a roasting pan (turkey sized), for the smaller version, use a crock pot or a smaller vessel for the oven. Smaller... [Giant] Brown in a frying pan: [Multiple frying pans or batches] - 1 or more lbs ground beef [3 lbs or more] - 1/3 or more of a sweet onion [whole onion or more] - 1 or 2 cans of whole mushrooms (drained, sliced works too) [3 to 6 cans] - 2 tsp minced garlic (the jar kind... or equivalent) [2 Tbsp] Stir together in your large cooking vessel - 1or 2 large cans of diced tomatoes (flavors are OK, and so are plain type) [3-6 cans] - 1 can of tomato paste [3 cans] - 1 can or less of condensed tomato soup [just one can, or more to taste] - 1 small bag of fresh spinach, chopped roughly, pretty small [1 large bag] Season with black pepper, other Italian herbs and spices optional (no salt, salt it at serving time) Stir in the browned items from the frying pan and mix well. Put the vessel into 275 degree oven (no lid) or turn on the crock pot (lid) and let it go for a few hours. Stir hourly. When well blended, combined, cooked down and things look "one color" -- taste it. Often it carries just a bit of canned bitterness that I deal with by stirring in 1/2 tsp baking soda and 1 tsp sugar into the GIANT batch. The "smaller" batch would be one third of those measurements. This is also a good time to assess your herbs, spices, and garlic levels. We like things pretty mild. You're not quite done yet! Add the following and cook for at least another 20 minutes: - 1/2 cup quick oats (to thicken) [1.5 cups] - 1 Tbsp butter or margarine [3 Tbsp] === Yield of the GIANT batch is about 12 meals for a family of 2 adults, 2 kids...
