Mediterranean Diet

We sort of follow it. Long before there was media coverage of this type of "diet" it's just how our eating evolved, based on my firm belief that a high (healthy) carb/low protein diet is the way to go for long-term health. Beans/legumes, whole grains, fruits and veggies make up the bulk of our diet, although we've been slipping on the veggies lately. Our protein consumption revolves around poultry and fish with minimal red meat. I didn't start incorporating a lot of olive oil until the past couple of years and am still working on increasing that. And we're still working on adding more nuts to our diet. Three of us have digestive issues if we eat too many, so we're trying to find the happy spot. I don't really have a lot of recipes. Mostly we eat a lot of bean-based soups in the winter, and bean and veggie-based dishes the rest of the year. Also a lot of pasta year-round.
