After 3 years, hubby finally wanted...

king ranch chicken again. He said I made it too much years ago; so it was off the menu. So now he asked for it; hen he asked if I could make it gluten free so our oldest could eat it also. I figure that would be possible; so I looked online, went to the store, got what I needed (note to self: don't take hubby and five kids!). Tonight we had king ranch chicken. Kids liked it too. Our little guy (failure to thrive) ate about double or so more than I thought possible.

 

Anyway, it *was* a little more complicated to do it GF, but it wasn't hard at all :)
