astrid Posted June 6, 2008 Share Posted June 6, 2008 I had this once before at a potluck picnic. I don't know who brought the dish, and I admit I made a PIG out of myself at the bowl. I think it's called "Texas Caviar" or "Cowboy Caviar" or something like that. I remember it had black beans, corn, green pepper, red pepper, onion, probably a few other things, and a dressing that seemed sweet yet vinagar-y. I looked online and could only find recipes that called for Italian dressing. I KNOW it didn't have Italian dressing, or tomatoes. It's supposed to be 95 degrees here this weekend!
