I would love new recipes for a light pasta salad, fruit salad, and lettuce salads. I am doing a roast beef layered sandwich. Any recipes would be appreciated. Lily_Grace Posted July 8, 2011 Share Posted July 8, 2011 We fell in love with a pasta salad here that is very simple: fresh basil leaves, torn or chopped fresh mozzarella cut into small pieces chopped or sliced tomato with the "guts" removed. panchetta, cooked and chopped olive oil a little salt (if needed) Toss it all together with pasta and let chill for a few hours. Mama Bear Posted July 8, 2011 Share Posted July 8, 2011 Different fruit salad: peeled grapefruit, sliced against the segments, arranged on a platter, drizzled with honey and drops of vinegar, topped with thinly sliced sweet red onions and mint chiffonade, sprinkled with sea salt. Quinoa salad: cooked and cooled quinoa, black beans, corn, chopped fresh cilantro, diced sweet onion and peppers, cumin, smoked paprika, lime juice, rice vinegar, salt, pepper, olive oil. Other additions - cubed avocado, turkey, grape tomatoes, sliced black olives, jalapenos if everyone will enjoy them. Green salad: Chopped hearts of romaine with fresh berries, sliced orange segments, feta or chevre, sweet onions, walnuts or pecans, drizzled with olive or walnut oil and balsamic vinegar, sprinkled with salt and freshly ground pepper. Tossed gently as it's served. Fig halves and chevre with an orange-honey-walnut-white balsamic dressing are delicious, easy, and always a hit.
