Here is a list of hands-on Thanksgiving projects on my blog. I looked for a free lapbook but couldn't find one I liked. So much printing! :) Did you find one?? You can Join their Yahoo! Group for details (the info on how to get the free lapbooks will come in your initial email). Thanksgiving theme page with links to hundreds of activities, crafts, coloring pages, games, etc that would work well in a lapbook.
