Rachel in KY Posted September 29, 2010 Share Posted September 29, 2010 I just gotta say that I adore Annalise G. Roberts and her Gluten-Free Baking Classics cookbook. I have made bread that actually tastes like wheat flour bread. The chocolate chip cookies look, taste, and feel exactly like, well, chocolate chip cookies. Yesterday, I made a coconut cream pie and the pie crust was absolutely amazing. It actually turned out better than crust I used to make with AP flour. I have used her flour mixes in my banana bread and pumpkin scones, and I can't tell any difference. I was very reluctant to buy the superfine brown rice flour because it was so freakin' expensive ($25 to buy and ship a 3 pound bag), but once it's mixed with potato and tapioca starches (I cut it with a little Bob's brown rice flour, too), it goes a long way.
