Mrs Mungo Posted September 12, 2010 Share Posted September 12, 2010 I cook them on a griddle, not in a pan. The "goo" is probably burnt sugar. Sugar *will* come out of the pineapple. I usually have a little on my griddle when I'm done, but not a lot? Maybe I'm cooking them at a lower temperature? Maybe I'm using a smaller can of pineapple? I use one small can of crushed pineapple for 1.5 lbs of meat. I use 85/15 lean to fat meat for making burgers, maybe you are using leaner meat (I use very lean meat for everything *but* burgers) and that is making them more crumbly? If you want to stick with the lean meat, you could add in an egg and a few bread crumbs to help bind it. I also put some soy sauce in mine.
