I normally do not peel carrots or potatoes (but I do peel my taro roots)- do I *need* to peel parsnips and turnips, or is this personal preference? I think that with the parsnip you might be able to get away without peeling. they are better peeled though. I never peel carrots,and 1/2 the time peel potatoes. Needleroozer Posted December 9, 2009 Author Share Posted December 9, 2009 Thanks! I ended up peeling both the turnips and parsnips, but think I could skip the peeling on the parsnips next time. The soup smells so good! In addition to the taro, carrots, turnips and parsnips, it also has a bunch each of kale and parsley, a head of garlic, celery, and thyme, sage, oregano salt, pepper, and bay leaves. Oh- and the ham bone and two kinds of white beans. This way, the Dude doesn't have to cook too much while I work the rest of the week and weekend!
