Chicken + garlic cloves + crock pot - any ideas

If you don't have a whole chicken, but are using breasts or other pieces, just sprinkle the individual pieces with the spices & put half the garlic on the pieces/the other half in the crockpot to mix with the juices.

 

1 roasting chicken, 4 to 5 pounds (to fit in crockpot)

salt

pepper

paprika

6 cloves garlic, mashed

6 tablespoons butter (cut into small pieces)

1/2 cup chicken broth

 

Sprinkle the chicken, inside and out, with salt, pepper and paprika. Spread half of the garlic in the cavity and spread the rest on the outside of the bird. Place the chicken in the slow cooker and oush a few pats under skin of breasts. Add the remaining ingredients and butter and cook on HIGH for 1 hour. Reduce to LOW and cook for 4 to 6 hours longer, until chicken is tender and juices run clear. Serve the hot garlic butter sauce with the chicken.

Okay, so this isn't a crockpot recipe, but I do, from time to time toss it all in the crockpot and let it cook that way. Depending on the way you cook it, it will have a slightly different "feel" but both are delicious.

 

Ferakh bel Tamatem

sauteed chicken breasts with tomatoes

 

1 tablespoon butter

1 tablespoon olive oil

4 chicken breasts (I use frozen or fresh)

salt and pepper

4 cloves garlic, crushed (add more if you like lots of garlic)

1 pound tomatoes, peeled and cut into small pieces (I use one large can of diced tomatoes just fine)

1-2 teaspoons sugar

1/2 teaspoon cinnamon (you can add more to taste.)

 

Heat the butter with the oil in a skillet. Put in the chicken breasts, season with salt and pepper, and brown them lightly on both sides. Add the garlic, tomatoes, sugar, and cinnamon. Cook for 15-20 minutes, or until the chicken is done but still juicy.

 

Or, toss all ingredients in the crockpot and let it cook :)
