Night Elf
In the past week, I've made banana chocolate chip muffins, red velvet cupcakes with cream cheese icing, and zucchini muffins. I don't know why I'm on a baking kick. I froze the majority of the muffins and I'm embarrassed to say we all went to town on those cupcakes yesterday so there aren't many left. They'll be finished off today. No more cupcakes for a while! I found a supposedly healthy recipe for the zucchini muffins. That's the first time I've cooked with coconut oil, honey and whole wheat flour. What are some other baked goodies I can have? I'm trying to find some healthy alternatives for chips and candy for the family.
zoobie
My kids and DH love these: https://www.averiecooks.com/2013/10/flourless-peanut-butter-chocolate-chip-mini-blender-muffins.html They're best fresh out of the oven. I can't make them now because my youngest is allergic to banana and doesn't understand why she can't have the chocolate chip muffin. ;)
