Building a trebuchet as bribery

So DH and DS were at the grocery store and managed to talk up a nice man about the local STEM school. For various reasons, DH and I are very reluctant to send him. DS is extremely excited to try, but his ability to dismiss the cons until he is knee deep in a situation never ceases to amaze me. So, to help remind him why we homeschool, I promised to build a small trebuchet during next years SOTW volume 2 studies. Anyone have a good source for plans?? Or other similar STEM projects related to the time period?
