Karen FL Posted October 22, 2008 Share Posted October 22, 2008 (edited) I'm preparing a chicken pasta salad for a church meeting tonight. I will be making my own dressing for the recipe. Should I pour the dressing on this morning, an hour or two before I leave home, or later at the church meeting? I ask because I've heard Emeril say that flavors need to "marry" in recipies. TIA! This is the recipe: Chicken Pasta Salad 5 cups chicken (about 3 breasts), cooked and cubed (from freezer) 2 cups grape halves 2 cups chopped lettuce 12 oz. spiral pasta, cooked and drained 1/2 cucumber, sliced and quartered 3 green onions, diced (optional) Toss together in a bowl. Dressing: 1/2 cup canola oil 1/4 cup sugar 2 Tbsp. white wine vinegar (I sometimes use plain white vinegar if that’s all I have) 1 tsp. salt 1/2 tsp. dried chopped onion 1 tsp. lemon juice 1 Tbsp. parsley Mix all ingredients in a sealable container and shake well. NevadaRabbit Posted October 22, 2008 Share Posted October 22, 2008 I have a couple pasta salad recipes and I've noticed the pasta tends to soak up dressing as it sits. That's the marrying part. :) Dress your salad when you make it, but make just a bit extra of your dressing. You might need to add the extra to the salad just before serving.
