Food for camping cross country runners

My dd's cross country team (20 males and females) is camping next week. I agreed to bring them dinner on Tuesday. Ideas or tried and true recipes? I'm thinking something that can be served room temp because I'm a good 30-40minuted from the camp site. Pasta? Fruit salad for dessert with cookies? I want enough to fill them but it's supposed to be 90 degrees so I'm not sure how " heavy" to go. Ideas?

Pasta doesn't fill up or sustain my athlete, so if you go that route I'd make sure to add in lots of protein--his fave is smoked salmon, but chicken or tuna could work too. And fresh veggies like zucchini or garden peas.

 

Would something like premade burritos work? I'm thinking calorie dense--rice, beans, cheese, veggies, guacamole...plus a side of chips and guacamole and salsa. I like the fruit salad for something cool and fresh. Don't forget the whipped cream! :)

 

I'm always thinking in terms of high calorie foods for my active DS. After a day of camp he would be famished and even in the heat he would have to seriously refuel from the day and prepare for the next.

 

Sounds fun!

Soft tacos. You can warm things up on site, or some things (big pot of beans) will stay warm for an hour in the right container (and/or in a no-ice cooler to stay hot). 

 

I'd bring a big pot of black beans, a big bowl of cheese, some Mexican rice, guacamole, salsa, tomatoes, lettuce, corn, and either carne asada and/or chicken (if I'm feeling ambitious) or taco meat (if I'm not) and a bunch of tortillas. . . Mmmmmm.

 

Put the hot stuff wrapped in towels into a cooler with some bags of microwaved (hot) rice and/or hot water bottles, and they'll be plenty warm when you arrive. 

 

Pick a couple easy sides (veggie trays, green salad) and some dessert, and you're good to go!
