Lean stew meat and stir-fry

I use lean stew meat for stir-fries quite often.  I usually cook the meat first, until it's just done, and then remove it from the pan as I stir-fry the veggies.  Then I add it back into the stir-fry when the veggies are done and add any sauces then. If I cook the meat too long, it does get tough.
