nd293 Posted September 15, 2013 Share Posted September 15, 2013 My couscous salad went down well with friends on Friday night: Bake/ roast onion slices and cubed butternut pumpkin - I wrapped each in foil and baked, then opened the parcels and grilled to brown a little. I threw a couple of unpeeled garlic cloves into one parcel. Roast red pepper. Make the couscous. Squeeze the garlic out of the roasted cloves and blend it with some oil to use when making the couscous. Add a squeeze of lemon juice if desired. To the couscous add the roasted onion, butternut and red pepper. Also olives, feta, sundried tomato and some chorizo sausages, chopped and fried.
