It did make me throw away the vital wheat gluten and WPI I had been using in LC recipes. I thought he had some good footnotes (important to me). The fact that he is a doctor also lends a lot of weight to his argument, IMHO. I thought the book itself was good, but that a bit more than half-way through it ran out of juice.
