KatieJ
I have some of this and want to try it for dinner. What would you serve with it? Pasta of course, but chicken? salad?
carriede
Roasted chicken or salad would indeed work. Sounds yummy! Do you have a link for the recipe, or is it from a book?
KatieJ
I am embarrassed to admit that I bought it at Costco. In my defense, I had never heard of it before I saw 2 woman discussinmg it with enthusiasm in the aisle at Costco. They were saying they served it with Ravioli. Just now I found tons of recipes online. And I assume we will love it and I will be making it in the future since my DH and I both love Butternut squash. JenMama
Turkey, chicken or pork Italian sausage is lovely with butternut squash, too. You could grill it and slice it over the pasta and sauce.
NancyNellen
http://plantoeat.com/recipes/600543 I made this one a few days ago and it was a huge hit. Carmelites onions and bacon! I added some butternut squash soup I had on hand and added the cream cheese and cheddar, and I imagine you could do the same with the sauce. Karen in CO
I made a butternut squash pasta dish this week. I served with a salad, some asparagus and a side of chevre and asiago (cheeses) since I couldn't decide which would go better with it. I made cookies for dessert.
