Ottakee Posted January 20, 2012 Share Posted January 20, 2012 For some reason, I wanted hominy this morning and I opened a big can. Now I have a lot left and need to know what to make/do with it. TXMomof4 Posted January 20, 2012 Share Posted January 20, 2012 This is by no means a gourmet plan but I just simmer it in chicken broth with cumin and chili powder, maybe some garlic for a while til it picks up the flavors and chow down. Saute some chicken in olive oil with garlic if you want to add meat. This is one of my comfort meals - my kids don't care for it though. We tried the posole recipe in Josefina's Cookbook, and it was a HUGE hit with the family, so we've made it many times since then. This recipe from Epicurious is very similar to the one in our book.
