They take milk or some other kind of base (soy milk, yogurt, etc) and add some flavoring and toppings and freeze with liquid nitrogen. A birthday party is $150 an hour plus the cost of the ice cream that might make for a fun homeschool field trip if you can get enough others to join you and split the cost- the kids get to go behind the counter and make their own ice cream.
