HollyDay
I messed up this morning. My recipe calls for 1 and 1/2 cups cooked pearl barley. I measured 2 cups dry and cooked that. Of course now I have tons of extra barley. What can I make with it????
Blueridge
It is a great soup addition, but my favorite way is to top warm barley with butter or cream, cinnamon, and maple syrup for breakfast...:)
kewb
Add it to soup. Or make one of my favorite dishes..mushroom barley: http://allrecipes.com/Recipe/byrdhouse-mushroom-barley-pilaf/detail.aspx
HollyDay
If it were winter, I'd certainly do soup. But today is supposed to be 105. Just not wanting hot soup.....
Pretty in Pink
I use a 50/50 mix of prepared barley to prepared lentils as a base for vegetarian taco/burrito/enchilada filling or vegetarian sloppy joes. Just season/sauce this filling as you would ground beef. The texture is really, really good. Additionally, you can add ground beef to the mixture if you like, or sub ground beef for the lentils altogether.
