i.love.lucy Posted August 2, 2011 Share Posted August 2, 2011 Do you have any allergies or want them to all be healthy?:D Here's a couple of my favorites: Swedish Meatballs 1 pkg of frozen meatballs 2 pkg of brown gravy mix 1 pint of sour cream Make the pasta and put it in 2 freezer bags and lay flat. Make the brown gravy as directed, stir in the sour cream and meatballs, and divide into 2 freezer bags. Thaw on counter or fridge and warm either in m.wave or stove top before serving. 2 dinners! Queso Mac 2 boxes of mac-n-cheese prepared as directed 1 can Ro-Tel tomatoes or 1 small jar of salsa 1 lb ground turkey or beef, browned and drained Make the mac-n-cheese as directed, when done stir in the salsa and meat. Divide into 2 freezer bags for 2 meals (for a fam of 4) OR divide into 2 aluminum cake pans and top with cheese. Thaw and reheat in oven for the pan ones, or m.wave/stovetop for the bagged one. 2 dinners! Most casseroles that I make are enough for a large 9x13 pan which is too much for my family. I prefer to split it into two and freeze the second one for later. Like baked ziti (penne, sauce, cheese) or chicken spaghetti or chicken/brocolli/rice or fried rice, etc. Quote Link to comment Share on other sites More sharing options...

Here is the marinade recipe: Ingredients 1/4 cup lime juice 1/3 cup water 2 tablespoons olive oil 4 cloves garlic, crushed 2 teaspoons soy sauce 1 teaspoon salt 1/2 teaspoon liquid smoke flavoring 1/2 teaspoon cayenne pepper 1/2 teaspoon ground black pepper Directions In a large resealable plastic bag, mix together the lime juice, water, olive oil, garlic, soy sauce, salt, and liquid smoke flavoring. Stir in cayenne and black pepper. Then I throw the chicken in the bag, throw cut up onions and peppers in another bag and throw them both in the freezer. When I've brought friends dinners to freeze, I will put tortillas in there also, it all freezes well and is a snap to throw together. I LOVE fajitas-I wish the rest of my family felt the same!
