How long do I have to let pita bread rise...?

So, we're doing that pita bread recipe from SOTW1 and it says to let it rise 2 hours. It's only been like 40 minutes and it looks like it's already significantly increased in size. Do I have to wait 2 hours? What's the shortest amount of time I can wait?

 

(It occurred to me after the fact that if I wait the two hours, it won't be finished rising until 5 PM, and we're supposed to leave at 5:15 for swimming lessons, which won't leave enough time to finish making the bread.

 

So, either I let it rise for maybe an hour and a half instead, or I have to leave it sitting for more like 4 1/2 - 5 hours before baking it.

 

Which is better?

My pita recipe is just like my other recipes- let it rise until double in size, punch down and form, and let rise again and bake. During the winter, the first rise might take 2 hours. In the summer it probably takes 40 minutes.

My sister doesn't even really let her pitas rise after forming. She does the first rise, punch down and form, and then bakes on high temps right on the oven racks. Her pitas are better than mine.
