Why would my sugar cookies stick?

My Valentine's Day sugar cookies stuck to the baking sheets. I tried everything - let them cool a few minutes, too them off immediately, sprayed the sheet, left it alone, chilled the dough, etc. I usually consider myself a good baker, but have yet to perfect the cut-out sugar cookie. The recipe had gobs of butter, but no shortening/lard if that matters. They either fell apart while removing them or the bottoms stuck enough to leave behind chunks. They are dried out and not nearly as enjoyable as they could be, but I guess that I'll still eat them! :lol:

I think the sugar maybe caramelized and stuck to the pan? I always line my cookie sheets with wax paper anyway to avoid that problem because it seems ALL of my cookies stick. lol The wax paper is great and when I take the sheet out of the oven, I just pull on the edges of the wax paper and slide the whole sheet off (with the cookies still on it) onto a cutting board to cool. If you have a baker's rack that would be the ideal place, but I don't have one so I use my large cutting board. HTH. :)

I had this problem when I tried the 'use powdered sugar to roll out the dough instead of flour' trick and again when I tried "roll the dough on the cookie sheet, removing the excess dough/leave the cookies in place trick". Once I went back to using flour, and rolling on the counter, I didn't have the problem again. lol

Oh, I forgot that I used powdered sugar! They were pretty tasty cookies so I'd love to try the recipe again. I'll use flour next time.

I'm pretty sure that it had to do with the sugar. Thanks for the wax paper tip.
