This time I have [blush blush] canned black beans, Roma tomatoes, red onion, garlic, fresh cilantro and rice. I was thinking of cooking the onions, garlic and then the beans in some olive oil and then adding the tomatoes and cilantro. I would serve it over rice and maybe add some shredded cheddar to it. Does that sound good? Oh and of course I plan to top it with sour cream. :D Would you eat it? Am I missing something major? How long should I cook the beans? TIA UPDATE: It was considered a great success by dd (11) and tolerated by the other children. (I've come to the conclusion that food is a hill I am willing to die on) My brother and his family all loved it. Thanks for your help. We eat all of that with pasta... kinda like at Thompson's Brew Pub... and I don't do any oil with it:-) I'd call what you're having...
