I have some red and green lentils, frozen pre-cooked black beans, dry northern beans, and some quinoa in my pantry to use up. I'm looking for dishes that I can make with those that are not heavy winter-type dishes (soups, stews, baked dishes). DS8 is making some vegan black bean burgers this week or next, and we've been trying to use the other black beans and some lentils up in tacos/nachos. I have BBQ lentils in the rotation, but I'm pretty stumped with the northern beans, red lentils, and quinoa. Dal isn't agreeing with me lately, but perhaps I need a new recipe. Our restrictions: NO cold dishes! I will projectile vomit picky-eater style anything that is cold and/or has the word "salad" in it that isn't actual lettuce. Reflux/GI issues - no tomatoes, lemon juice, uber spicy spices, etc. See "projectile vomiting" above. Celiac - but I can adapt almost anything to be gluten free by now. We're omnivores, so side dishes to meat or meat included are fine. Anyone else cleaning out the pantry and needing summer dish suggestions, add it to the thread!
