I'd just add a cup or so of beef broth and cook it on high pressure for however long for the roast (I think 60-90 min). I use the hot Rotel. It gives it a kick but it's not overly spicy. http://ourbestbites.com/2009/08/southwestern-beef-wraps/ I made this lentil soup in my instant pot a few weeks ago. Sautéed the veggies on the sauté function, added the rest of the ingredients, put it at high pressure for 5 min, and hit it with a potato masher. It was delicious.
