Just thought you all might like a BAM chicken recipe.  Sooo moist, flavorfull!

This soup is the BOMB. Even my picky eaters simply ADORE it.

 

I do make a few modifications, and have found it to be absolute perfection now. And leftovers are amazing as well!

 

My modifications:

- soak my lentils during the day (I've done it both ways...I like soft lentils, so soaking is a must for me, otherwise you have to cook the soup a lot longer).

- I don't often have celery, but always have peppers of various colors, so I just use those in place of celery

- I often throw a spoonful of Organic "Better Than Bouillion" Chicken base in with the "boxed broth" (I buy it from Costco) (http://www.amazon.com/Better-Than-Bouillon-Organic-Chicken/dp/B00415IRQO)

- I do add a few extra seasonings in with it - whatever I feel like - seasoning salt, garlic salt/powder, onion salt/powder

 

Definitely sprinkle the parmesan cheese on top (in your bowl) but I don't add extra olive oil in the bowl (but I do add extra olive oil when cooking the vegetables in the first step).

Corundas. There's a recipe in this blog post, but I haven't tried making them yet.

 

We ate them in Morelia. The Archdiocese there wanted to build a new building about 40 or 50 years ago so they started doing a kermés which is a fundraiser/food event thing that is common here in Mexico. They cooked every night and eventually raised enough money for their new church. The whole thing was so successful that when they built the church, they added a large sort of cafeteria space in the basement so they could keep selling food. They sell food to hundreds of people every night and use the money for all sorts of humanitarian projects and they also feed people who need help. Individuals can come to the church to ask for money for specific needs and they donate to hospitals and other organizations. People from the church volunteer their time to cook, serve, and clean up and there were men, women, and children of all ages helping. The food is very affordable and there was a wide variety of people there, and it's a great place to get regional dishes like corundas.  We ate them with crema and a red chicken sauce that was delicious.
