Foolproof baked breakfasts?

I'm cooking Mrs Mungo's baked oatmeal tomorrow - I'll be getting up, putting it in the oven, then going out for a brisk walk (I'm not worried about leaving the oven on).  I'd like other options for doing the same - preferably to prepare the night before and leave to cook for 35 or 40 minutes while I walk, but nothing that needs to be timed to the second.  Extra points if they can be warmed up to eat leftovers again the next day.  

 

This is for Hobbes and me before he goes to school and I go to work: a balanced meal with protein, (preferably whole grain) and carbohydrate.  Extra interest if there are fruit/veg involved, but I can add that separately.

 

We eat most things but don't like things that are too sweet or too fatty.
