Truscifi Posted July 17, 2013 Share Posted July 17, 2013 Jamaican style pigeon peas and rice. Cook regular white rice, but sub a can of coconut milk for an equal part water. Drain a can of pigeon peas (from the ethnic food section of the grocery store) and mix in. Season with salt and pepper. You can have ham with it if you need a complete meal. Google for a few recipes to find one you have all the stuff for, because there are many variations. I like one with green peppers & onions.
