Paige Posted March 7, 2013 Share Posted March 7, 2013 I made homemade vanilla several years ago and have been topping it off regularly. I am sure to let it sit for a while after topping it off before using it. I shake it regularly and it has tons of black seeds floating in it. Yet- it seems to taste more like alcohol still than vanilla. Is all homemade vanilla like that? I put in more beans per jar than recommended, so maybe it is too strong and what I think is an alcohol taste is a vanilla taste? I just made homemade vanilla ice cream and the kids reject it because it tastes too "vanilla." Too my tastes, it's not so much a strong vanilla taste but yummy bourbon flavored ice cream. :tongue_smilie: Quote Link to comment Share on other sites More sharing options...

That said, unsweetened homemade vanilla does taste like alcohol. ;) It's always tasted more alcoholic to me than store bought. I have some beans stored in sugar (making vanilla sugar).
