RoughCollie
I have a half gallon of buttermilk which expires on Oct. 17. The top 2" looks like water. The bottle has never been opened. I bought it to use for baking. Anyone know if it separates? Should I throw it away? Thanks, Aileen
redsquirrel
I use buttermilk all the time in my baking. It always separates. I wouldn't consider baking with it, unless I shook it up first.
Farrar
Yeah, it's in the nature of buttermilk to separate. I find that the organic stuff does it more than the non organic, but it all does it. Just shake it. If it's in date, it's fine.
dbmamaz
i'm not convinced buttermilk ever really gets too old. well, sometimes it just turns solid or smells extra bad. Once its open, you can freeze it in portions. It separates even worse after freezing, but still does great in baking! I have used sour (rotten) milk in bread and its fantastic. Now that i'm dairy free, any milk sub that goes bad is turning in to biscuits!
