KatieJ
My DD told me she canned some tomatoes yesterday. She skipped the step about water bath processing them. All but one jar sealed. So...........I know next to nothing about canning anything. What is she giving up by not doing the water process. Will they be safe to eat? Are they not as fully cooked if you don't process them? GraciebytheBay
Do you mean she put hot tomatoes in the cans and put the tops on? I wouldn't think that was a good idea! Tomatoes in their jars need to be boiled for quite a while to kill botulism spores (and other things, I think). What was the method she used? KatieJ
She put tomatoes into the hot jars, covered them with boiling water and lemon? It sounded odd to me. Then she just let them seal.
The Girls' Mom
They have to be processed to store safely. The boiling water isn't hot long enough without it to inhibit bacteria growth.

ProudGrandma
I agree with all of the above....needs to be sealed properly in order to be safe. I wouldn't trust it at all!!!
