daughterofsarah77
We are planning a birthday celebration for my Mom, who is diabetic. She is super fussy about her carbs, and will not treat herself (even on her birthday!!!) So, we are trying to find a recipe for cake, cheesecake, or something suitable for a birthday...I see a lot of recipes on the internet, but I have no experience cooking with Splenda or such. I am wondering if anyone has a recipe (that they have tried and loved) to suggest. Looking to stay under 12 carbs for dessert. Thanks! Delirium
http://www.dlife.com/diabetes/diabetic-recipes/ I've tried a few recipes from here and they've always been tasty.
AdventureMoms
What about ice cream? Cake is hard because sugar contributes to texture and flour is super carby too... But there are some good low-carb ice creams out there, and sugar-free syrups and toppings at most grocery stores. The ice cream will likely be vanilla, though. But you can get fun stuff to put on it and do sundaes. Hershey's makes a decent sugar-free chocolate syrup.
