Amy loves Bud
I am bringing dinner to a sweet neighbor tonight. She cannot have dairy, seeds, nuts or anything raw (salad, veggies, etc.). It's just she and her husband, both around 65 yrs old. Any ideas? Thanks!
Mom2legomaniacs
What about a roasted chicken and some roasted or grilled veggies? And maybe some kind of dessert to go with.
1bassoon
I made chicken with noodles for a family with similar restrictions - to me, even though it's summer - it's the ultimate in comfort food! Maybe some corn muffins on the side?
muffinmom
People that age tend to love cooked vegetables (at least here in the South, they do)--like maybe a vegetable plate with cornbread or rolls. And they always seem to love dessert, but just a small serving (that's what they always tell me!;))
magistramom
Sounds like it could also be colon related...ewe, the scraping of roughage on tender intestines! Poor thing, whatever it is. I love the roast chicken and vegetable idea. Just be careful not to add spices that are "seeds" such as celery seed or rosemary. They can get caught in pockets in the digestive track and turn into nasty (life threatening) infections as they rot (they don't move through normally). You could also do a Panini sandwich platter. Everyone could choose their fixings (shredded chicken, mini meatballs in a sauce, sauteed vegetables, and fixings for the other people - cheese, pickles, etc). After the sandwich is assembled, you could individually grill them.
Philothea
I would suggest a chicken pot pie or a shepherd's pie. Another idea would be chicken cacciatore, with plenty of veggies, and pasta of course. You could easily make a big batch, and they might enjoy the convenience of heating up the leftovers.
Amy loves Bud
Thanks y'all. I've got chicken breasts that I will season up somehow, some new poatoes to roast with bell peppers and onions (that I was going to season with rosemary - thanks magistramom!) and carrots to saute in dill and olive oil. I'll make some chocolate chip cookies for an easy dessert. Thanks a bunch!
