NanceXToo Posted January 24, 2012 Share Posted January 24, 2012 Cold cut and cheese roll ups without bread (can wrap in lettuce too) Fruit and cottage cheese Yogurt Soup Fruit, cheese and nut trays Cucumbers, carrots, celery etc with things to dip in like ranch dip or cream cheese Apples, bananas and peanut butter Scrambled eggs with cheese, or omelets with veggies, or baked scrambled egg "muffins" with some veggies in it Hardboiled eggs Tuna salad (with or without hardboiled egg in it), maybe with carrots/celery grated into it. Eat it on carrot or celery sticks instead of sandwiches, or just off of a spoon. Salads with cold cuts, cheeses, grilled chicken or shrimp on it. In the Rain Posted January 24, 2012 Share Posted January 24, 2012 :bigear: I'm in a rut too and could use some new ideas. Eggs? We have fried or scrambled eggs several days a week. Sometimes I serve them with just veggies and fruit. Yesterday I made skillet fried potatoes to go with eggs. My kids loved it. They also like hard boiled eggs and deviled eggs. Lettuce Cups - ground chicken or turkey, a bit of soy sauce in the cooking and some diced celery and onion - serve in lettuce leaf cups Cold cut roll-ups - basically the same as those appetizers rolled in the tortilla wraps, just miinus the tortilla Salads - taco salad, grilled chicken salad, cobb salad, nicose salad, etc. Deviled Eggs Cheese & prosciutto with melon (honeydew or cantaloupe) and assorted nuts Leftovers from night before (meat & veggies) Zucchini Lasagna (use zucchini instead of noodles) Burgers with or without cheese and a salad or vegetables, or make oopsie rolls to use as buns Stir-Fry meat and vegetables Quiche without the crust Quote Link to comment Share on other sites More sharing options...
